Change...

Change... the only constant in life! Lately it seems that I'm living my life in beta mode. Learning all about blogging, creating a home on My Space, designing banners and avatars in Photoshop, etc. Learning new things can sometimes be overwhelming but well worth it in order to reach out and share with others. I'm stepping outside of the box again and mixing it up a bit. I come across so many cool artists that I want to share, so I'm going to start publishing MoCo Cafe as new things come my way instead of just once a week. Remember, change is good! Recipe - Cheri's "World Famous" Red Enchilada Sauce

I have been searching for a killer enchilada sauce recipe ever since we moved to Pueto Rico. Well, I've found it! I made a few changes to "spice" it up a bit and it's the BEST, super fast and easy too!

Ingredients:
1 large onion, diced
2 T olive oil
1/4 C flour
1 T garlic powder
3 T GOOD red chile powder
1 t marjoram
1 t oregano
1 t cumin
1 1/2 T chicken bouillon
4 C water

Directions:
Saute onion in olive oil until transparent. Add flour to onions until coated. Add all remaining ingredients and whisk until thickened. Bring to a boil, cover and simmer for 45 minutes, stirring frequently. Sauce will have a gravy consistency and is perfect for enchiladas or over steaks. Can be kept in the refrigerator for days, or frozen.
